The story
At Bartholomeus in Knokke-Heist, the guiding philosophy is “Simpel maar Goed” – simple but good. Chefs Bart Desmidt and Philip Vandamme, alongside host Sandra Vandegeuchte, welcome guests with a fresh, modern approach to fine dining. Their six-course menu is built on honest, pure produce that speaks for itself, with no substitutions or alterations – a sign of a complete, rigorously composed culinary vision.
The cooking is modern cuisine, precise and ingredient-driven. The team lets the product take centre stage, and the result is a tasting experience that feels both refined and direct. The wine list is deliberately curated to match the same ethos: limited but carefully selected, with a choice of wines by the glass. A fixed charge for still and sparkling water is included per person.
Bartholomeus holds two Michelin stars, a recognition of the kitchen’s excellent cooking. The award is earned through a quiet confidence in simplicity – not flash, but depth of flavour and technique.
The dining room is intimate, with counter seating available, and the atmosphere is warm and professional. The restaurant is open Wednesday through Saturday for lunch and dinner, with a staggered welcome at 12:00–12:15 and 19:00–19:15. Closed Sunday, Monday, and Tuesday.
