Demain – Modern Mediterranean Cuisine with Michelin Star in Knokke-Heist

Demain sits on the edge of the Dutch-Belgian border in Cadzand, but its heart belongs to Knokke-Heist. Here, chef Dani and his team craft a menu that moves with the seasons, drawing on the Mediterranean and modern techniques. The restaurant earned a Michelin star in 2026 for its high-quality cooking, a recognition that feels earned rather than declared.

The dining experience at Demain revolves around two main choices. The “Wonder of Nature” menu, priced at €185, is a full narrative driven by the seasons. On Friday and Saturday evenings, and for groups of five or more, this is the only option – a sign of confidence in the story it tells. The menu includes langoustine, foie gras, panchino, and Balfego tuna, followed by courses like Hamachi with cashew and leche de tigre, North Sea crab with pumpkin and horseradish, scallop with sauerkraut and eel, and venison with artichoke and beetroot. A palate cleanser of lemon and ginger leads into a dessert of Granny Smith apple with spices and brioche.

For those who prefer a lighter approach, the seasonal menu offers three or four courses for lunch or dinner, at €125 or €170. And across all menus, guests can add chef Dani’s signature dish: langoustine with paella and saffron (€45). A vegetarian menu is also available.

The wine program is led by Romée, who says: “Together with our team, we taste new flavours in the glass every day, matching the flavours on the plate.” The restaurant’s “Interesting Wine List” tag, awarded by the guide, confirms this attention to pairings.

The space itself is equipped for comfort – air conditioning, parking, and the ability to host private parties. The atmosphere is quietly serious about food, without pretension. Demain is a place to eat well, listen to the season, and let the kitchen lead.

Chef Dani Hoefnagels is here, together with his partner and hostess Romée, having successfully transformed Demain into a beautiful fine dining restaurant. He presents elegant and exciting dishes, each one a pleasure to taste, which are thoughtfully explained by Esmée and her team. A major addition is sommelier Benjamin van Goethem, who excels at selecting complementary beverages and speaks about them with genuine enthusiasm. The atmosphere in the modern restaurant, which offers views of the dunes, is relaxed and welcoming. We notice many Belgian guests, which is a promising sign, as our neighbors are notoriously discerning when it comes to wine and food. Baked scallops and tiny crispy fried prawns with salsify and sauerkraut, topped with vin jaune foam, set the tone for the meal. They are served alongside a horn-shaped vessel filled with scallop tartare and sauerkraut ice cream. The dish is accompanied by sourdough bread from bakery Koos in Valkenburg and salted Bordier butter. Next follows a superbly cooked turbot fillet, generously plated with razor clams and a light, foamy jus infused with vadouvan. The Inopia 2021 from Lebanon, a classic blend of Grenache Blanc and Sauvignon, is an excellent choice by the sommelier. The dessert features a parsnip flan surrounded by parsnip caramel, paired with blackberry compote and vanilla ice cream. It is wonderfully matched with a glass of Ximénez-Spinola 2023, exceptional harvest. Earthy and rounded notes of raisin and vanilla bring the experience to a perfect close. This establishment has secured a spot in the Top-100 of Lekker at number 98.

Demain, Frans voor 'morgen', is de naam van het fine dining restaurant in Cadzand, waar ooit het vermaarde Pure C gevestigd was. Gekozen om de toekomst van de culinaire reis te markeren die de ambitieuze chef Dani Hoefnagels en zijn vriendin en gastvrouw Romée Monkel begin 2024 in samenwerking met het inpandige Srandhotel zijn opgestart. Dani is niet de eerste de beste want zo jong als hij is reeds ervaring opgedaan in topzaken in binnen- en buitenland. Een eigen zaak waar een pure en duurzame keuken centraal staat en verbinding hoog in het vaandel staat was zijn droom. Toen deze locatie op zijn pad kwam was de beslissing dan ook snel genomen. Dani kookt een inventieve keuken met mediterrane invloeden, rijk van smaak met lokale seizoensgebonden ingrediënten. Er is keuze uit meergangenmenu's naast à la carte. De sfeer is relaxed in de open en lichte ruimte met waanzinnig uitzicht over de duinen en de zee. Er zijn veel buitenlandse gasten aanwezig die overnachten in het hotel. Vooraf een beeldschoon 'pakketje' van spinazie gevuld met structuren van komkommer en selderij in een frisse gazpacho van groene tomaat en avocado. Gebalanceerd en rijk van smaak. Al net zo verfijnd is langzaam gegaarde sappige artisjokbodem met crème van vadouvan en een velouté van gebrande ui. De bijgaande krokantjes van filodeeg geven een aangenaam mondgevoel. Het glas chardonnay, Main Divide by the Donaldson family 2021 uit Nieuw Zeeland, ingeschonken door onze integere gastvrouw Romée sluit mooi aan, net als de alcoholvrije pairing van geperste groene appel geïnfuseerd met salie. Piece is malse kalfswang op minicourgettes met antiboise van tomaat en cèpes en zilte al dente bereide risotto met parmezaan, spek en mediterrane kruiden. Zalig. En voor de madeleine met een krokante glace van blackberry's en crème chantilly om in te dopen willen we morgen terug. De toon is gezet. Cadzand mag zich weer verheugen in een inspirerend horeca-adres. Welkom in Lekker.
