La Rigue sits on the edge of the Zegemeer in Knokke-Heist, part of the La Réserve resort. The kitchen’s guiding principle is simple: take the classics of Belgian and French cuisine and execute them with absolute precision. “The ultimate goal,” the team says, “is to let guests truly enjoy classics like steak tartare, asparagus à la flamande, tomato with North Sea shrimp, shrimp croquettes, fried sole, filet pur… in an extremely refined form.” High-quality ingredients and a pursuit of perfection are at the core of every dish.
For lunch, the “Inspiration of the Chef” menu offers two or three courses that change regularly, reflecting the creativity of the kitchen. On weekends, the three-course lunch menu is a particularly inviting way to experience the chef’s seasonal thinking.
For those who prefer the timeless dishes the restaurant is known for, the “La Rigue Classics Menu” is a fixed sequence of elegance: a starter of hand-peeled North Sea shrimp croquettes, a main of filet pur with potato purée, beurre noisette, and pepper sauce (or the fisherman’s catch with asparagus and beurre blanc), and a dame blanche dessert of vanilla ice cream, warm chocolate sauce, and whipped cream. La Rigue opens daily for breakfast from 7 to 10 am, and it is not reserved for hotel guests.
