The story
At Castor, chef Maarten Bouckaert strips gastronomy back to its essence. Pure, fresh and innovative, his kitchen works with quality regional produce, respecting terroir and creating refined, contemporary flavours. The result is a no-nonsense experience where the focus is on warm hospitality and surprising, unique tastes.
The restaurant, located in Beveren-Leie near Kortrijk, offers two distinct tasting journeys. The main Terroir 'Land & Sea' menu highlights ingredients like line-caught sea bass, langoustine, and Ardennes venison, with an optional supplement of Osietra caviar. For those who prefer a plant-based focus, the Root, herb and greens menu is a dedicated vegetarian alternative, featuring dishes such as Roscoff onion with black garlic and a Wellington of sand carrot with miso. Menus range from four to seven courses, with prices starting at €115 for lunch.
This meticulous approach to modern French cuisine has earned Castor two Michelin stars, a recognition of its excellent cooking. Yet the atmosphere remains welcoming and relaxed. Whether you come for a lunch or dinner with friends, family, or colleagues, the aim is simple: to let you enjoy the best things in life, on your plate.
