The story
After a celebrated run in the cloister of Saint Vincentius, chef Bas and his partner An have moved ViEr just 200 metres away, into a carefully restored notary house built in 1854. The building’s magnificent facade now shelters their refined seasonal cooking, carried forward with the same enthusiasm that earned them a Michelin Recommended distinction.
Bas honed his craft at the hotel schools of Koksijde and Namur, then gathered experience in renowned restaurants across Belgium. An brings years of hospitality expertise, ensuring the service is both stylish and warm. Together, they run a kitchen that celebrates purity: “not much fuss, but a lot of flavour.” Their approach is firmly farm-to-table, letting the best seasonal products speak for themselves.
ViEr is open for dinner from Tuesday to Saturday, with counter dining that invites you to watch the action. The menu changes with the seasons, offering balanced compositions of fish, meat, and vegetarian options. Bas’s choices are guided by instinct and passion, avoiding unnecessary complexity. The result is a relaxed yet precise meal that feels both personal and generous.
