The story

Ah Quy: Authentic Vietnamese Eats in Leuven

The kitchen and its philosophy

Ah Quy serves traditional Vietnamese cooking in Leuven via a streamlined counter service model. Staff members prioritize nutrition by constructing menus with minimal added sugars and naturally gluten free components. The culinary strategy centers on extracting maximum aroma from raw ingredients rather than heavy sauces. Chefs rely on precise knife work and rapid wok techniques to preserve crunch and brightness.

Signature plates

Guests queue for classic Vietnamese pho loaded with sliced brisket, round meatballs, or poached chicken alongside soft rice noodles. The sandwich selection features toasted baguettes packed with lemongrass marinated pork, grilled beef, or seared tofu blocks. Additional counters offer bun cha salads mixed with pickled carrots and bean sprouts. Frying pans finish the rotation with crispy vermicelli topped with crushed peanuts and scallion oil.

Inside the space

Le Fooding highlighted the venue for replicating bustling Hanoi street corners within a compact footprint. Customers wait for numbered slips while seated on metal barstools pushed around basic flat-pack tables. The ventilation system pushes a dense cloud of mint, Thai basil, and cilantro straight into the dining area. Warm notes of star anise and cardamom linger on jackets when patrons step back onto Alfons Smetsplein.

Good morning, Vietnam! At Jelle Mannekens’ place, you (almost) feel like you’re really there! Line up at the bar, grab a seat on a barstool around a wobbly Ikea table, before being called back up to get your order. The space is heady with the scent of mint, Thai basil, cilantro, lime, cinnamon, star anise, cardamon and cloves… The house hits? A truly delicious banh mi sandwich made on baguette bread and stuffed with grilled chicken, pork, beef or tofu marinated in lemongrass; a delicious bowl of pho with strips of beef and beef meatballs, or chicken, pork or tofu, plus rice noodles, herbs and fresh veggies. To go with all that, there are bun cha salads made using the same ingredients and fried noodles. // Pat Net
