Spring 2026, for example, opens with artichoke, labneh, muesli, and basil, then moves through dishes like North Sea crab with peas and lemon verbena, or Burgaud duck with kumquats and sobacha. Guests can choose between 4, 5, or 6 courses (the longer menus are required on Friday and Saturday evenings), and each comes with optional wine pairings—including half-glass and non-alcoholic options.
