Born in Grotti, a small agricultural village, Miluzzi learned to value authentic taste from his mother and grandmother Gina. He completed his studies at the Rieti Hospitality Institute after working in various Italian restaurants. His approach embraces what he calls the luxury of simplicity, allowing ingredients like potatoes or fine fish to speak for themselves without unnecessary embellishment. He adapts traditional regional recipes using modern food science while sourcing biological products from selective artisanal producers across Italy.
The dining room captures the simple, convivial spirit of old Italian osterias, featuring a low wall that separates the kitchen from the hall so guests can watch the chef at work. Summer months bring diners to the terrace for alfresco meals in the quiet historical street.
