In the historic Carré district of central Liège, Caudalie brings a fresh, confident voice to French cuisine. The restaurant, recognised in the 2026 Michelin guide, is the work of young chef Simon Poletto, who composes plates of notable precision. His guiding principle: let noble ingredients speak, elevated by subtle sweet-savoury alliances.

The dining room is contemporary and intimate, a calm setting for the evening’s progression. Sommelier Manon Moullet oversees the wine programme with an easy, elegant touch. Her carefully chosen pairings accompany each menu, drawing from a list that evolves constantly and spans grands domaines alongside smaller growers worth discovering.

Menus That Change with the Season

Caudalie offers two menus. The evening menu (100€) runs from June to early July: salmon trout with Anabelle potato and capers, artichoke millefeuille with mango and tarragon, line-caught pollack with peas, grapefruit and almond, Castaing duck with radicchio and cherry, local cheeses from fromagerie Caseus, and country strawberries with fromage blanc and spruce bud. A wine pairing is available at 55€, or a non-alcoholic version at 45€.

The lunch menu (48€) is served at midday on select days: langoustine with carrot and passion fruit, followed by the same pollack dish (supplement for a later seating), matured Aubrac beef with fennel and chartreuse, and the same cheese and dessert options. Wine pairing at 27€.

Simon and Manon’s shared passion for oenology is evident throughout. The wine list is a living document, updated regularly, and they host special evenings featuring a specific winemaker or region with an exclusive menu. Whether you choose a Champagne Gosset, a Riesling from Zind Humbrecht, or a Condrieu from Chapoutier, the selection is thoughtful and well-curated.
