The story

Festin Restaurant in Liège: Seasonal Innovation Opposite Parc d'Avroy

The Chef and the Kitchen

Stéphanie Wouters founded Festin in Liège after a decade of culinary development starting at June's in Antwerp. She refined her craft through competitions like Jonge Keukengeweld and Lady Chef before launching this innovative cuisine. Her current work earned selection for the Be Cheffe competition highlighting women in the kitchen. The restaurant operates as a corner canteen with windowed walls and ultra-clean decor in multiple shades of gray. Wouters designs a seasonal cuisine that follows the rhythm of the seasons rather than fixed traditions.

Terroir and Seasonal Dishes

The menu shifts every two weeks to showcase the best available produce. Wouters sources vegetables from local organic farms and supplements them with harvests from her own ecological garden in Gouvy. A recent service featured quail prepared with wild garlic, chicory, potatoes, and a stout sauce. Desserts include a light chocolate cake balanced by blood orange and kumquat. Guests can choose from vegetarian menus spanning five to seven courses, or request fully vegan adaptations upon reservation.

Dining Space and Beverages

Festin accommodates up to fourteen guests exclusively by reservation. The compact room sits directly opposite the Parc d'Avroy, allowing diners to view the park and boulevard beyond the glass. The beverage program mirrors the kitchen's commitment to provenance with short lists of natural wines and local ciders. Cocktails and mocktails remain house-made, avoiding processed shortcuts. The space supports both intimate dinners and private parties while maintaining a focus on honest ingredients throughout every service.

Le Fooding — Listed

After falling in love with Liège, Antwerp-based chef Stéphanie Wouters (June’s) left everything behind to set up shop opposite the Parc d’Avroy (where you can share your sandwich with the geese when the weather is nice), in a corner canteen with windowed walls, ultra-clean decor and multiple shades of gray. From breakfast to afternoon tea, she pampers early birds and late risers alike with homemade granola, eggs with homemade smoked bacon, local cheeses, mouthwatering sandwiches (pork roulade, salad, caramelized onion jam and tarragon mayonnaise or gravlax, fennel salad and smoked beet mayonnaise), and delicate small plates. That particular day: juicy mussels, creamy pea soup with chorizo and snow peas; quail with wild garlic, chicory, potatoes and an addictive stout sauce; and a light and airy chocolate cake with blood orange and kumquat. There’s a veggie option too: smoked portobello burger and smoked beetroot tartare… And everything is available to take away. // Heloise Bartsoen
