The story
At L’Air de Rien in Esneux, near Liège, the ambition is simple: to make you live a truly good moment. Chef Stéphane Diffels and his team focus on the power of aromas and the memory of a perfectly cooked dish. The cuisine is driven by the chef’s desires, the seasons, and what he harvests from his own vegetable garden. He creates his own condiments through lacto-fermentations, misos, and garum, adding depth to every plate.
The restaurant occupies a former stone farmhouse, modernized with raw wood and lime walls. Two bright dining rooms and a few "secret" rooms, including a private salon where you can enjoy the menu while listening to vinyl records, set the stage. A view of the open kitchen offers the rare spectacle of a calm, choreographed team working in trust. In warmer months, a spacious terrace at the edge of the kitchen garden invites you to dine outdoors, where you can watch the flowers and herbs being picked for your plate. The dress code is relaxed—come in a tracksuit or a crinoline dress, as long as you feel good.
Stéphane Diffels prefers not to talk much about himself. You discover who he is through his cooking: open, benevolent, meticulous, generous, and attentive. His timidity in real life gives way to extravagance on the plate. Because choosing is renouncing, he offers a single, unique menu. This is not a default choice; each meal is a journey built with patience and precision, where every step has a reason to exist. You may find him at the stove, focused on the barbecue, or in his garden cultivating the vegetables, fruits, and herbs that appear throughout the menu.
The menu is in perpetual evolution, reflecting the season, the garden, and the chef’s inspiration. The core offering is the "lâcher-prise" (let go) menu, available in 4, 5, or 6 services. A lunch formula is also available. The team encourages guests to set aside preconceptions and trust the surprise. As Chef Diffels says, the dishes guests talk about most are those made with ingredients they would not have chosen themselves. For those who prefer not to be surprised, the current menu can be consulted. A vegetarian version is available on request. The wine list complements the food, featuring great crus alongside fantastic, affordable bottles from passionate, chemical-free vintners.
