The story
At Salto! in Lier, the kitchen draws from classic French bistro cuisine, prepared with the best ingredients from trusted suppliers and growers. The menu changes with the seasons, always with respect for product and environment. This approach has earned the restaurant a Michelin Recommended distinction for 2026.
The cooking is straightforward and confident. Starters include witloof with North Sea crab, a toast of beef marrow and anchovy, and Zeeuwse oysters with shallot vinaigrette and dill. Main courses range from hand-cut beef tartare ‘Holstein’ with lettuce and fries, to braised pork cheeks ‘Zingara’ with mushrooms, smoked tongue, madeira, and truffle. Classics for two – côte de boeuf with pepper sauce and fries, or sea bass in puff pastry with chicory beurre blanc – are listed as “salto classics.”
Wines are a particular strength: Salto! imports its own selection, with a list that spans Germany, Austria, France, Italy, Switzerland, and Australia. Many are natural or low-intervention, and several are available by the glass. The outdoor seating makes it a pleasant spot for a long lunch or dinner in Lier’s city center.
The atmosphere is relaxed bistro, with a focus on quality ingredients and honest cooking. Reservations are taken for up to six guests.
