The story
Jan Tournier trained in classic French cuisine, honing his skills at Antwerp’s Hilton, at Het Gebaar, and under Roger Van Damme, where he mastered the foundations of modern cooking. In 2009, he returned to his roots in Lommel and opened Cuchara in his grandparents’ house. What began as a small, cosy eatery grew into one of Belgium’s most creative restaurants. He earned his first Michelin star in 2014 and a second in 2019, a distinction the restaurant still holds today.
Tournier’s cooking starts from the principles of classic French cuisine, then takes inspiration from Japanese flavours to create an intriguing modern twist. Each dish places the product centre stage, presented with striking minimalism. The result is a balanced, pure taste sensation that follows the rhythm of the seasons. Cuchara works with a fixed menu that changes regularly, reflecting what is available and at its peak.
Guests choose from a tasting menu or a shortened Chef’s Menu. At lunch, a dedicated lunch menu is also offered. On Wednesday and Thursday evenings, and Thursday and Friday lunchtimes, a seasonal four-course Chef’s Menu is available. Wine pairings and non-alcoholic pairings accompany each option. The restaurant’s minimalist setting—combined with the precision of the plates—creates a focused, sensory experience. In good weather, the terrace extends the dining space outdoors.
Cuchara’s recognition from Michelin reflects Tournier’s unwavering dedication to his craft. The restaurant is also rated 17.5/20 by Gault&Millau, cementing its place among Belgium’s finest tables.
