The story
In Ligneuville, at the foot of the Hautes-Fagnes, Hôtel du Moulin has been a family affair for generations. Martina and Jean Goire welcome guests into a building that feels “untethered from time,” surrounded by the conifers and streams of the Ardennes. The restaurant, a destination in its own right, is where Chef Jean Goire practices his craft.
Chef Goire draws on the richness of the Ardennes terroir, using ingredients that are organic, fresh, and sourced through short supply chains. Many come from his own kitchen garden. His cooking is described as “traditional but current, audacious but distinguished, satisfying yet light.” This precise balance has earned the restaurant a 13/20 rating in Gault&Millau and the distinction of being the only “Table Distinguée” in Belgium awarded by Logis. In 2026, Michelin also added its recommendation, confirming the restaurant’s place among the region’s most reliable tables.
The menu changes with the seasons, built around the best produce the area has to offer. Diners can expect plates that are both generous and refined — the result of a chef who is a member of the Mastercooks of Belgium and deeply committed to his regional roots. The setting, whether in the dining room or on the outdoor terrace, offers a calm, elegant atmosphere that matches the food.
