M Bistro calls itself "slightly different." No magic tricks or theatre on the plate, no ties or stilettos at the table. Just a moment to slow down in good company. That philosophy shapes every detail.
Chef Mattias Maertens and his team work with what the land and sea provide: butter from the rich polders, thick fish from the North Sea, herbs from their own garden. The cooking is pure, seasonal, and rooted in the French and modern cuisine traditions of the Belgian coast. "Being able to tell a story with a dish – that's the kick," says Maertens.
Three options guide the experience. The M menu offers a full tasting journey. The Markt menu is a shorter, weekly-changing selection. And à la carte lets you choose dishes that follow the moment. Each is built around honest products and thoughtful combinations.
M Bistro's approach has earned a place in the Michelin guide as a Recommended restaurant, alongside praise from Gault&Millau (14.5/20) and Foodtaster (88/100). The Bistronomiegids also lists it – a sign of consistent, unpretentious quality.
