The story
Maurice le limonadier in Nivelles began as a quiet wine bar dream before evolving into the current bistronomic kitchen led by Chef Jérémy Mahieu. The space retains the original team's vision while embracing a slower pace of service and seasonal planning. Mahieu builds his menu around French and Belgian foundations, prioritising local produce and straightforward techniques over heavy presentation. This grounded approach to bistro cooking has earned the venue a spot on the 2026 Le Fooding list.
The menu highlights specific preparations that rely on straightforward techniques. Shrimp croquettes appear alongside a vegetable stew featuring eggs cooked at sixty three degrees Celsius and crisp lardons. A Scottish Black Angus onglet arrives with house cut fries, while a salmon fillet rests on pea purée beneath a light béarnaise. Desserts follow the same measured style, including a rhubarb crumble paired with black lemon sorbet and a traditional dame blanche sundae.
