The story
In Nossegem, just outside Brussels, Bistro R has entered a new chapter under the name Bistro R 2.0. The team — Roland, Ayse, and Gaëlle — welcome guests into a warm, inviting setting with dimmed lighting and carefully selected background music. The focus is on a seasonal, market-driven approach to modern French cuisine.
The kitchen works closely with what is available from the market, adjusting dishes according to daily deliveries. The result is a menu that evolves with the seasons: starters like beef carpaccio with basil and dried tomatoes, or a terrine of venison and duck liver with confit fruit and brioche; mains such as Victoria perch fillet with a chicory stoemp and a white wine butter sauce with squid ink, or a tagliatta of beef with cardamom-glazed carrots and thyme-roasted potatoes; and desserts including a red fruit dome with mango coulis and a classic crème brûlée with Bourbon vanilla.
Bistro R offers both set menus and an à la carte selection. The Bistro Menu runs three courses at €52.90 or four courses at €67.90. For lunch, a market-driven "Happy Lunch" is available at €29 for two courses. The à la carte list includes a wide range of starters and mains, from lobster ravioli with Nantua sauce to a Holstein ribeye with pepper or mushroom sauce, and concludes with desserts like a Dame blanche or an assortment of cheeses.
Bistro R’s consistent quality and seasonal focus earned it a place in the Michelin guide as a Recommended restaurant. The recognition reflects the team’s dedication to a refined yet unpretentious dining experience. For larger groups of ten or more, the restaurant can open on days it is normally closed, making it a flexible choice for celebrations or business gatherings.
