The story

Bar Bristol Ostend: Coastal Cuisine Meets Neighborhood Charm

The neighborhood pivot

Bar Bristol occupies a corner shop in Ostend, where Bruce and Charlotte Lybeer swapped a traditional bistro setup for a petrol-blue counter. This coastal cuisine thrives on proximity, pulling seasonal produce from nearby farms and catching fish from the North Sea. The approach earned a listing on the 2026 Le Fooding guide, which highlighted the seamless mix of neighborhood charm and precise sourcing. Diners linger over early breakfasts or stay past midnight for late plates.

Plates and the daily rotation

Chef Bruce Lybeer structures the evening around a five-course fixed menu featuring items like miso marinated mussels and pollock served with mousseline. The lunch counter offers a three-course selection built around day catch, such as North Sea prawn croquettes alongside fermented chilies. Guests ordering à la carte often start with amberjack sashimi dressed in tomato water and kumquat. A classic tarte tatin closes the meal without unnecessary fuss.

Soundtrack and seating arrangements

Charlotte and bartender Femke manage the beverage program while curating a rotating playlist that matches the room’s energy. Large windows overlook the street corner terrace, where diners watch Theater Aan Zee crowds pass by. The space shifts comfortably between a relaxed lunch spot and a lively dinner venue. Tables fill quickly during festival weekends, so advance booking remains essential.

We’re eternally grateful to Charlotte and Bruce Lybeer, who had the brilliant idea of transforming a dreary Ostend bistro into a bar packed with good vibes. From the first rays of sunshine, the petrol blue counter attracts early risers as well as late-nighters, thanks to its neo-neighborhood bar atmosphere that continues right up to the street-corner terrace. In addition to his meaty, sea-faring and vegetarian menus, Bruce delights à la carte with comfort food that’ll banish the blues, while always paying attention to his sourcing. We ordered: dainty amberjack sashimi with tomato water, fermented chilies and kumquat; North Sea prawn croquettes; and some delicisouly old-fashioned tarte tatin for dessert. // Anita Kane
