“Bij het opkomend tij werden tekens uitgewist, indrukken bleven” – With the rising tide, signs are erased, but impressions remain. That line sets the tone at Eaust, a restaurant on Ostend’s Oosteroever where Alicia and Bram have returned to do what they do best. After 22 years running Plassendale in the city, they now bring their warm hospitality and love for pure flavors to this new address at Vuurtorendok-Zuid 29. The setting is understated, letting the food and the sea-tinged air speak.
The kitchen at Eaust is rooted in the Belgian coast and the land behind it. Working with whatever the season and the market deliver, the team puts North Sea fish, shellfish, and carefully selected meat and vegetables at the center of every plate. The cooking is direct, without unnecessary flourishes – respect for the ingredient comes first, with a touch of creativity that keeps things interesting. Michelin recognised this approach with a Recommended rating in 2026, a nod to the honest, precise cooking that defines the place.
The à la carte menu offers a wide range of starters and mains that reflect the region’s bounty. Oven-roasted king prawns with honey tomatoes and herb butter sit alongside a classic fish soup with North Sea fish, cockles, and mussels. Gravad lax with guacamole and sour cream, house-made shrimp croquettes, and escargots Bourguignonne are other starters. For mains, customers choose from golden-fried sole with fresh fries and salad, pan-fried ray wing with capers, veal sweetbreads in a mustard seed sauce, or a rib-eye Holstein with pepper or mushroom sauce. There is also fettuccine with Iberico pork cheek, ossobuco, and Iberico pluma.
Lunch is served on weekdays with a choice of two to four courses, priced from €43 to €74, while the “Favoriet” menu (€63) is available both midday and evening and includes a starter of shrimp croquettes or king prawns, followed by sole or ray wing. Desserts such as Baileys café glacé, crème brûlée with Madagascar vanilla, and chocolate mousse round out the meal.
Eaust is a place where the surroundings – the dock, the sea air, the quiet edge of Ostend – enhance the experience. Alicia and Bram welcome guests with the same warmth that made their previous restaurant beloved, now in a new chapter that feels both familiar and fresh.
