The story
At the Hendrik Baelskaai, just steps from the North Sea, Michiel and Nathalie run Storm with quiet confidence. They are Ostend born and raised, childhood sweethearts who turned a shared passion for food into a restaurant that feels both personal and precise. Michiel trained in the kitchens of Villa Maritza and the Ostend Queen, and honed his craft through stages abroad. Nathalie grew up in her grandparents' restaurant, learning warmth and attention to detail. Together, they created Storm: a place where the sea dictates the rhythm.
The kitchen focuses on Modern French technique applied to the finest seafood. Menus change with the tides—literally. Storm offers two fixed menus: LAAGTIJ (low tide) and HOOGTIJ (high tide). The LAAGTIJ menu might open with seabass paired with watermelon, kohlrabi, and radish, followed by a catch of the day with potato, rocket, and pine nuts. Then comes hondstong (a local flatfish) with peas, lettuce, and broad beans, and a dessert of raspberries, white chocolate, meringue, and elderflower. The HOOGTIJ menu adds a course, such as langoustine with cauliflower and kaffir lime. These dishes evolve daily based on market supply and weather—a true reflection of the coast.
The dining room is understated, with outdoor seating available in good weather. Wine pairings are offered, and there is a private room for special occasions. The atmosphere is relaxed but polished, with Nathalie's friendly service setting the tone. Storm's commitment to seasonality and precise cooking earned it a Michelin Recommended distinction, a fitting nod to its consistent quality.
For anyone seeking Modern French seafood in Ostend, Storm delivers a genuine taste of the North Sea—no fuss, just excellent ingredients treated with respect.
