In the spoelpolders of his hometown Ostend, chef Willem Hiele runs a restaurant that feels like a quiet pause. Here, time slows down. The kitchen works on the rhythm of the sea, drawing inspiration from the unpredictability of nature, the character of the region, and the rich offerings of local farmers and fishermen.
There is no fixed menu at Willem Hiele. Instead, guests are invited to a total experience built around a series of sequential dishes, determined by the day’s catch and harvest. This spontaneity — cooking in the moment — defines the kitchen. The result is a seasonal tasting menu that brings local, daily-fresh produce with a dose of emotion and intuition. It is not about listing ingredients; it is about capturing what the land and sea offer right now.
The restaurant is also a place for events and private dining. Whether a lunch or dinner, the atmosphere is one of rust, nature, and refinement. The space welcomes guests for both lunch (Saturday and Sunday) and dinner (Thursday through Saturday), with a wheelchair-accessible interior, outdoor seating, and air conditioning.
