Honest, young, and unconstrained

At Cécile in Pamel, the team of Judith, Tom, and Astrid brings a straightforward philosophy to the table. Their cooking is described as “eerlijk, jong en ongedwongen” – honest, young, and informal. There is no extensive menu, no fixed tasting menu. Instead, they offer a classical kitchen that follows the seasons, served in a cozy and authentic setting.

The restaurant is named after Cécile, one of two sisters who once ran the building. Judith and Tom, also sisters, felt a connection to the space and its history, choosing to honour that legacy with the name.

An open kitchen and a seasonally changing à la carte

Diners can watch the action from the open kitchen while choosing from a concise à la carte. Recent starters include beef tartare with umami and miso, vitello tonnato, and tuna with beetroot. Main courses range from cappelletti with cacio e pepe to Belgian white-blue beef or wild sea bass with kale and hand-peeled grey North Sea shrimp. The bread is made by artisan baker Les Pains de Stéphane.

The wine list is a serious affair, with a strong focus on Burgundy and Champagne, alongside selections from Italy and local Belgian sparkling wines.

This is the kind of place you’ll be tempted to keep all to yourself: a peaceful townhouse with all-white interiors, tucked away in a small Flemish Brabant town and surrounded by fields. Ring the bell and you’re welcomed in as if you were an old friend. Inside a dining room with the effortless elegance of a bouquet of wildflowers, sisters Judith and Astrid Van Snick provide radiant, attentive and impeccably warm service. Meanwhile, chef Tom Van Nieuwenhuyzen (a pastry chef by training) casts his quiet magic in the windowed kitchen. And what arrives on the blond-wood tables are delicate, self-assured plates that get straight to the point: corn falafel with creamy tahini sauce and a quintessential Flemish egg salad, to open the show; invigorating Irish oysters served with a rather pronounced seaweed butter; perfectly pink lamb fillet served with tender glazed carrots and new potatoes, all jolted awake by a mint and coriander chimichurri that lights up the whole plate; and for the sweet finale, a rich white chocolate mousse paired with freshly churned avocado ice cream. · Cléo Popina
