The story
Les Frères Louise is a family-run restaurant rooted in five generations of hospitality. The Dierickx-Vandenheulen family realised a longtime dream in 2021 when they moved to a beautiful 18th-century domain in Ellezelles, at the crossroads of the Flemish Ardennes and the Pays des Collines. The setting is a former miller's house, transformed into a stylish restaurant with a spacious garden for sunny days and a welcoming fireplace for cooler evenings.
Chef de Cuisine Jérémy Thielemans devotes his talent to flawless execution of classic cuisine—the kind everyone loves. The menu is an honest, generous homage to Flemish tradition: think shrimp croquettes, perfect Dover sole, veal kidneys, foie gras terrine, and grilled specialities. Local ingredients from the surrounding pastures and forests are at the heart of every dish. "Instead of wanting to dazzle the world with their own creations, they let their customers shine with happiness," noted De Standaard.
The wine list is curated by Laurenz, who was awarded the Guide Michelin Belgium & Luxembourg Sommelier Award 2025 and named Meilleur Sommelier de Belgique by the same guide. He describes his quest as a fascinating search for surprising and renewing pairings. The restaurant itself holds the Michelin Recommended distinction, underscoring its commitment to quality and tradition.
