The story
Quadras, a Michelin One Star restaurant in Saint-Vith, Belgium, is the domain of chef Ricarda Grommes. The award recognises her high-quality cooking, a reputation built on years of disciplined technique and personal creativity. The restaurant, which she opened in spring 2016 with her husband Kevin Ohles, sits at the roundabout on Malmedyer Straße, at the gateway to the city.
Grommes’s foundation was laid with Walter Schröder at “Le Luxembourg” in Saint-Vith. She then sharpened her skills as a garde-manger at the two-star “Le Clos Saint-Denis” near Hasselt under Christian Denis, followed by two years as garde-manger and poissonnier at the three-star “Waldhotel Sonnora” in Dreis under Helmut Thieltges. After taking over “Le Luxembourg” in 2010 and earning a loyal following, she and her husband created their own house: Quadras.
The dining room seats twenty guests in a setting of light colours and noble metals – a classic, refined backdrop for the food. Grommes describes her cooking as an expression of her life philosophy, balancing tradition with invention. The menu, rooted in French cuisine, reflects this: precise, creative, and deeply personal. As a Goethe quote on the restaurant’s website puts it: “No pleasure is temporary, for the impression it leaves is lasting.”
