The story
In the mid-1800s, a coaching inn with stables stood in Sankt Vith. After the war, the hotel was rebuilt and reopened in 1950. In the 1970s, Arno and Ingrid Pankert transformed it into a gourmet restaurant that quickly earned international renown. Today, the third generation – Carina and Eric Pankert – runs a completely refurbished Hotel zur Post, continuing a legacy that has held a Michelin star uninterrupted since 1976.
Chef Eric Pankert, born in 1968, trained in illustrious kitchens: three-star Im Schiffchen in Düsseldorf, three-star Jamin in Paris (under Joël Robuchon), and two-star Les Célébrités in New York. His modern French cuisine is described by guests as “magical”, “perfectly balanced”, and “beautifully presented”. Carina Pankert, his wife, ensures excellent service and personally decorated the hotel’s warm, friendly interiors. Together, they create an experience that feels both refined and welcoming.
The restaurant’s motto: “Enjoy with all the senses and be pampered.” The menu changes monthly, showcasing Eric’s creativity with seasonal ingredients. A “Midweek Dining” surprise menu (four courses with wine pairings) is available for those who love spontaneity. The wine list, a true passion, holds around 500 bottles – from hidden gems of small Demeter estates to top producers. The Pankerts regularly travel to wine regions to maintain personal contacts and handpick selections, ensuring a constantly evolving, excellent pairing for every dish. The setting is cosy and elegant, and on sunny days, tables are set on the terrace.
