The story
Restaurant Rollier sits at the most beautiful bend of the Scheldt in Sint-Amands, a setting that changes with the seasons: warm autumn colours and a crackling fire in winter, a breathtaking terrace overlooking the river in summer. The interior was recently refreshed, creating a space that feels both cosy and refined.
Three years ago, Maurane and Nicolas opened their own restaurant after years of training at the hotelschool in Koksijde and experience in renowned kitchens. Nicolas brings French classical cooking with Asian influences to the plate, while Maurane takes care of hospitality and the wine pairings – together, they form the ideal match.
The cuisine here is a careful balance: French technique meets subtle Asian flavours, without losing the clarity of either tradition. The result is a menu that feels both grounded and surprising, built on seasonal ingredients and precise execution. This approach has earned the restaurant a Michelin Recommended distinction, a nod that aligns with the quiet ambition of the kitchen.
