The story
Behind De Fakkels stands a complementary duo that met at the hotelschool of Herk-de-Stad. Their joint passion for gastronomy brought them together and today forms the driving force behind their restaurant in Sint-Truiden. Chef Seppe gained experience in several renowned houses and started at De Fakkels as a pastry chef before growing into the head chef. Liese began her career in the kitchen but later found her way to the world of chocolate and ice cream creations. Today she leads the front-of-house team and runs the restaurant alongside Seppe.
The pair strives for an honest kitchen with a worldly touch, where the flavour of seasonal and regional produce takes centre stage. Their family character is reflected in every dish: the best of here, brought to your plate with love, served in a beautiful old mansion with a modern, warm atmosphere. De Fakkels’ approach to Modern Cuisine is rooted in farm-to-table principles, sourcing ingredients from local producers and letting the seasons decide the menu.
The five-course degustation menu showcases this philosophy with dishes like Hamachi Crudo with cucumber, green apple and coriander; trout mi-cuit with artichoke, olive and tomato; and lamb from Sisteron with green asparagus, broad bean and panisse. An intermezzo and a roasted peach with almond, raspberry and vanilla round out the experience. Vegetarians are also warmly welcomed with adapted options. The wine pairing, carefully selected to complement each course, is available as a standard or non-alcoholic alternative.
In 2026, De Fakkels earned a Michelin Recommended distinction, a fitting recognition of their refined, ingredient-driven Modern Cuisine. It is a place where sincerity and skill meet at the table.
