The restaurant’s philosophy is built around a balance of classic and modern influences, resulting in a menu that evolves with the seasons. Diners can choose from a lunch menu, a degustation menu, or an "ontdekkingsmenu" (discovery menu), each designed to showcase a sophisticated palette of flavours. Wine and juice pairings are available to complement the meal.
A seasonal tasting menu, such as the Easter offering, illustrates the kitchen’s precision: yellowfin tuna with tarragon, kohlrabi and sesame; trout with pea, wild garlic and quinoa; North Sea brill with white asparagus, vin jaune and grey shrimp; Gambero Rosso with vadouvan, coconut and cauliflower; and British lamb with morel, Pertuis asparagus and grain mustard. The meal concludes with a crème brûlée of rhubarb, Avola almond and yoghurt.
This commitment to quality and creativity has earned De Stadt van Luijck a Michelin Recommended distinction, recognising it as a destination for serious, ingredient-driven cooking in Limburg. The restaurant also hosts special events, such as a wine tasting dinner in collaboration with Vinvino, pairing a five-course meal with wines from Burgundy and Piedmont.
