The story
At Marsnil in Sint-Truiden, chef Frederik Cornelis steers a local cuisine built on the rhythms of the Haspengouw landscape. The kitchen operates as an open culinary house, drawing primarily from the estate's own yields and nearby producers. Each dish highlights pure flavors from the season, supported by the family's commitment to natural farming methods across the grounds. This transparent link between the soil and the plate underpins the restaurant's award of three radishes in the We're Smart Green Guide.
The seasonal menu offers four courses for 77 euros or five courses for 95 euros, showcasing produce like wild sea bass with fennel and tarragon, or locally sourced beef paired with eggplant. Guests can explore distinctive combinations such as Marsnil lamb served with brave hendrik, or finish with three Limburg cheeses accompanied by cherry and mint. Regional cooking here emphasizes the character of the harvest, with every item sourced from Belgian or local origins. The wine list mirrors this terroir focus, featuring vintages grown on the property's 2.25 hectares.
The name Marsnil derives from an old map reference meaning island in the marsh, a metaphor the family embraces for their sanctuary amid the busy modern world. Mother Isabelle has welcomed guests to the domain since 1984, while her sons Frederik and Adriaan now drive the fresh direction. Adriaan tends the vineyard planted in 2014, producing red and white grapes that thrive on this unique soil. Diners enjoy the rural atmosphere surrounded by the food forest, swimming pond, and historic buildings that have stood for over two centuries.
