The story
Since 1992, L'Embellie has been a steady presence on Soignies’ dining scene. The name, meaning "a spell of fine weather," suits the restaurant’s character: a place where the cooking and service consistently brighten a meal.
Chef Pol Marquebreucq is a self-taught cook who has pursued his passion here for more than three decades. His commitment to quality is exacting—he travels to Brussels several times a week to source exceptional ingredients at the morning market. Increasingly, he also works with local producers: the Ferme de la Tortue, fromagerie “Un peu de tout,” and Ferme du Joli Bois, reflecting a growing sensitivity to ecology and regional supply chains.
In the dining room, Géraldine Godefroit, who trained in hotel management in Switzerland and public relations in Brussels, oversees service and the wine list. She also brings a keen eye to the interior design. Guests can choose between two atmospheres: a cosy space near the bar with parquet floors and a striking wine library, or a bright, contemporary room overlooking the garden, finished with blue stone, wood, and clean colours.
The cooking is modern, seasonal, and refined—a style that has earned L'Embellie a Michelin Bib Gourmand year after year. Gault & Millau has also praised the kitchen, noting the perfect mastery of cooking techniques. The à la carte changes with the seasons; recent dishes include poached foie gras with rhubarb compote, Irish beef fillet with girolles, and pan-fried veal sweetbreads with béarnaise. A lunch menu (Tuesday to Friday) is presented orally and offers a three-course formula at 38€. For a more elaborate experience, the “Suggestion de Pol” menu runs 45€, with optional wine pairings.
The restaurant is closed from 24 February to 1 March. Reservations are advisable, especially for the popular lunch service.
