Albert’s path is rooted in a deep respect for the land and sea. The son of an industrialist with a passion for global ingredients, he brings a palate for spices and a rigorous approach to sourcing. This connection to local produce is active and direct: he meets producers, tastes in the field, and lets their enthusiasm guide him. One of his creations, a fir bud pickle, speaks to his ability to link nature directly to the plate.
His experience is broad and exacting. He has worked in Michelin-starred kitchens in Brussels and London, orchestrated the prestigious Belgium King’s Day for 750 guests in Doha, and developed a scientific approach to gastronomy at L’Héliport in Liège.
