The story
In the town of Walem, just outside Mechelen, Centpourcent has held a Michelin star for fifteen consecutive years. The restaurant, helmed by chef Axel Colonna-Cesari and host Anneleen Soethaert, offers a dining experience that is both refined and relaxed. The team focuses on a surprising combination of noble flavours and refined textures, using traditional ingredients alongside innovative cooking techniques. The atmosphere is calm and unhurried, allowing the seasonal menus to take centre stage.
Chef Colonna-Cesari draws inspiration from the rich supply of seasonal, regional products. The menu changes every two weeks, ensuring that what you eat reflects the best of the moment. Guests can choose from several multi-course options, each available with a carefully selected wine pairing, a beer arrangement, or non-alcoholic ice teas. The "Ontdekken" (Discover) menu is a three-course lunch offering, while the longer "Proeven" (Taste), "Genieten" (Enjoy), and "Eindeloos Genieten" (Endless Enjoyment) menus provide a deeper exploration of the chef's Modern Cuisine. A special "Super Saturday" menu is available for guests under 30.
A recent "Ontdekken" menu shows the kitchen's style: red mullet with green olive and white peach, followed by confit beef with a cucumber condiment, turnip, burnt leek, and a miso-onion cream. Dessert, "100% Sweet", combines apricot, verbena, and pistachio. The restaurant is open for lunch and dinner from Wednesday to Saturday, with a well-deserved summer closure in late July and early August.
