In the heart of Tongerlo, Westerlo, Maison Colette is a place where refined gastronomy and genuine warmth meet. Chef Thijs Vervloet and his wife Lore welcome guests into a beautifully restored former physician's residence, transformed into a space that feels both elegant and deeply personal. The restaurant’s name is a tribute to Thijs’s grandmother, Colette Leemans, a lifelong cook who taught him the craft and inspired his passion from a young age.
Thijs’s cooking is rooted in the classic French kitchen, but his style is anything but heavy. He combines refined nuances with rich sauces and subtle flavours, always starting with the finest ingredients from personally selected producers. The result is a modern cuisine that balances tradition with innovation. The signature menu showcases this approach: dishes like Belgian veal tartare with cauliflower cream and Imperial Heritage caviar, or lobster with confit tomato and Taggiasca olive, followed by Bresse chicken with white asparagus and girolle mushrooms. A market menu, available at lunch midweek, offers a shorter, equally considered experience.
After the success of his previous restaurant, Colette De Vijvers, Thijs returned to his roots in Westerlo. Here, in the same village where his grandmother and great-grandmother Anna lived, he and Lore found a home with authentic character. While Thijs creates the culinary masterpieces, Lore ensures the atmosphere is warm and welcoming, making every guest feel looked after. The setting is a house full of character, where tradition and innovation coexist naturally. It is a place where every moment is meant to be special, and the experience is built on craftsmanship, passion, and a relentless curiosity for perfection.
