Aria anchors Sydney’s waterfront dining scene, operating as a reference point for Australian cuisine since 1999. Executive Chef Tom Gorringe directs the brigade alongside co owner Matt Moran, tracking harvest cycles and fishing quotas to shape daily offerings. Guests navigate this seasonal philosophy through a curated three course showcase or opt for deeper exploration via five and eight course tasting menus. Every plate prioritises provenance over trend.

Standoff plates and degustation flow

The current lineup highlights textures that shift between delicate preparations and robust reductions. Two gulf blue swimmer crab chawanmushi arrives infused with kombu and native lime, while torched bonito rests beside crisp green apple and kohlrabi. Heavier mains like dry aged duck paired with beetroot and thyme transition into westholme rump cap dressed with jerusalem artichoke and black garlic. A milk chocolate and chestnut finish grounds the sequence.

The room and its coastal backdrop

Owners Matt Moran and Bruce Solomon designed the circular quay venue to frame uninterrupted sightlines toward the opera house and harbour bridge. An art filled interior balances that expansive waterfront view with intimate table spacing. The layout supports both quick pre theatre lunches and extended weekend dinners. Sunlight floods the glass façade during afternoon service, softening the polished timber and stone surfaces.
