A Menu Rooted in Tradition and Terroir

Starters like the Acarajé do Cerrado—a pastel of organic corn flour filled with minced meat, sweet-and-sour jiló, and green tomato vinaigrette—showcase this regional focus. The Guacamole de Açaí, a vegan option, offers a surprising twist on a classic. For seafood lovers, the Ceviche no Tucupi uses white fish with cashew, plantain chips, and the Amazonian broth tucupi.

Mains are divided into “Do Mar” (from the sea) and “Da Fazenda” (from the farm). The Moquequinha do Rio is a classic fish stew with coconut milk and dendê oil, served with biodynamic rice and farinha d’água. From the land, the Cordeiro Sagrado features lamb shoulder slowly roasted in a marinade, accompanied by mineira canjiquinha (hominy grits) and sweet potato. The Galinhada Caipira, a rustic chicken and rice dish, is a comforting homage to Brazilian home cooking.

Desserts continue the theme of simple perfection, with a Cheesecake de Goiabada made with artisanal guava paste and a Carimbó featuring Brazil nut ice cream with cupuaçu.
