The story
The name Aiô comes from the Mandarin exclamation 哎喲, a sound of surprise—and that sense of the unexpected defines this restaurant in Vila Mariana. Open since 2023 as a sibling of the acclaimed Mapu, Aiô starts from the chefs’ deep knowledge of Taiwan and their memories of the island, then pushes beyond tradition.
The kitchen works with authentic Taiwanese techniques and flavors, but the menu is not bound by conventions. Every dish is designed for sharing; there are no divisions between starters and mains. The team guides guests on the number of plates and the best sequence for the evening, tailoring the experience to individual tastes. The result is a contemporary take on Taiwanese cuisine that surprises through textures, colors, and layered flavors.
The space itself is an open kitchen, with counter dining at its heart. Guests watch the cooks at work, and the atmosphere is intimate and direct. Cocktails are equally considered, created to complement and elevate each course.
Aiô’s approach has earned recognition: the restaurant was named Michelin Recommended in the 2026 guide, a nod to its confident, original cooking and warm hospitality.
