The story
Since 2011, Aya Japanese Cuisine has occupied a two-story townhouse on Rua Pedroso de Moraes in the Pinheiros neighborhood. Behind the large wooden door, the interior—designed by Carolina Rocco—is clean and contemporary, a quiet contrast to the city outside. Chef Juraci Pereira, known as “Jura,” runs the kitchen alongside partner Beto Ganme, shaping a Japanese experience that is both classic and personal.
The restaurant earned a Michelin Recommendation for 2026, a nod to its unwavering commitment to fresh ingredients and precise technique.
The Omakase menu is the heart of the experience. It begins with a couvert and a cold appetizer, then progresses through sixteen premium sushi pieces—each one a unique creation by the chef. The selection changes daily, driven by what Jura finds at the fish markets, where he personally picks the best specimens before dawn.
Bluefin tuna is a specialty here, particularly the otoro—the richest, most buttery cut from the belly. Served as sashimi or nigiri, each slice is meant to melt on the tongue. The kitchen treats this prized ingredient with the respect it deserves, staying true to the traditions of Japanese cuisine.
The restaurant also keeps a notable sake list, perfectly suited to accompany the subtle flavors of a meal that balances classic restraint with the chef’s own creative touches.
