The story
The kitchen at Barú Marisquería is entirely devoted to fish and seafood. Ingredients are chosen with rigor, and they shine in recipes that blend accents from across Latin America. The concise menu, where seafood grilled over fire takes center stage, is paired with a wine list featuring small producers from Brazil and abroad, plus drinks that match the house’s invitation to travel through the delights of Latin America.
Chef Dagoberto Torres commands the kitchen with a calm demeanor and an easy smile. Born in Colombia, he named the restaurant after Isla Barú, near Cartagena – the first beach he ever saw, at age ten. Torres has studied and explored the cuisine of the sea for years. “My intention is to contribute a chapter to this scene, to broaden the range of options, since Brazil has a rich and extensive coastline.”
His path includes stints at D.O.M. in São Paulo, the Suri Ceviche & Bar, and a consultancy for a restaurant in Hong Kong. In 2018, he opened Barú Marisquería. He has also co-authored a book, Ceviche – Do Pacífico para o Mundo, now in its third edition.
Barú Marisquería’s commitment to quality and value has earned it a Michelin Bib Gourmand, a nod to its fresh, well-executed Latin American seafood in a welcoming setting. In São Paulo’s Cerqueira César neighborhood, it offers a genuine taste of the coast, from the grill to your plate.
