The story
Blaise takes its name and creative spirit from Blaise Cendrars, the Swiss-French poet and central figure of modernism who fell in love with Brazil. Housed within the Rosewood São Paulo, the restaurant honors that same harmony between humanity and nature. The space is conceived as an intimate, welcoming brasserie – part alpine chalet, part urban retreat – where every detail reflects the connection between table and land.
Chef Fernando Bouzan leads the kitchen, reinterpreting French culinary tradition through the lens of Brazil’s finest ingredients. His cooking draws from forest, sea, and field, weaving together flavors that tell the stories of the farmers and producers who cultivate the country’s natural wealth.
