Chef Bel Coelho’s Clandestina is not a fixed restaurant but a project born from the dinner parties she used to host for family and friends in her own home. Now returning to São Paulo after a pandemic pause, it operates as an itinerant dining experience, each season presenting a new tasting menu of 12 to 15 courses.

The chef, a São Paulo native and activist for over 26 years, brings her deep research into Brazilian food cultures to every menu. She focuses on native ingredients, traditional communities, and production chains, believing this work is essential for preserving knowledge, customs, and biodiversity. Her training at the Culinary Institute of America and stages at kitchens like El Celler de Can Roca and D.O.M. inform her contemporary technique, but the soul of Clandestina is her fieldwork across Brazil.

Past menus have been dedicated to themes like the Orixás of Candomblé, the six Brazilian biomes, native fruits, a tribute to the Serras, and a personal take on her Portuguese heritage. Each is a narrative of place and culture. This dedication to quality and value earned Clandestina a Michelin Bib Gourmand in 2026.

While Clandestina operates by reservation for its themed tasting events, Bel Coelho also runs Cuia Restaurante, a café, bar, and restaurant inside the Livraria Megafauna in the historic Copan building. There, her cosmopolitan recipes continue to privilege native and agroecological ingredients from Brazil’s biomes. The menu changes regularly, with dishes like the Nosso Oswaldo Aranha (grilled filet mignon with rice, farofa, potato chips, and roasted garlic purée) and desserts such as Mousse de chocolate, doce de bacuri, creme de cumaru e farofa de castanha do Pará. The cocktail list, with drinks like the Tucupi Sour and Pindorama (cachaça, vermute, cambuci, cumaru, orange flower water), mirrors the same commitment to Brazilian ingredients.

In a city of São Paulo’s scale, Clandestina offers a rare, research-intensive look at what contemporary Brazilian cuisine can be.
