The story

Fogo de Chão São Paulo – Authentic Brazilian Steakhouse & Churrasco Tradition

Fire and Tradition in Every Cut

Since 1979, Fogo de Chão has kept the flames of churrasco burning. What began as a family dream rooted in the mountainous landscapes of Rio Grande do Sul has grown into a global name, yet the São Paulo restaurant remains true to its origins. The founding brothers grew up on a traditional Southern Brazilian farm in the Serra Gaúcha, learning to cook over open fire in the churrasco style. After formal training in Rio and São Paulo, they opened their first wood-structured restaurant in the countryside of Porto Alegre. Its reputation spread quickly among politicians, businessmen, and celebrities, leading to a second location in São Paulo — the very city where this chapter of the story continues.

The Art of Churrasco

The heart of the experience is the gaucho chefs, who expertly grill an array of fire-roasted cuts on skewers over direct heat. The signature steak is picanha — the prime part of the top sirloin, lightly seasoned with rock salt and sliced thin. It is tender, robust, and essential to the churrasco tradition. Other standout cuts include the beef ancho (bone-in ribeye), fraldinha (bottom sirloin with strong marbling), and costela (beef ribs slow-grilled for hours until the flavors deepen). For those seeking something extraordinary, enhancements like a dry-aged tomahawk ancho or Wagyu porterhouse are available. The preparation is one of restraint: the beef is allowed to cook slowly so its natural flavors mature. The Market Table offers fresh, vibrant accompaniments, and Bar Fogo introduces Brazilian-inspired small plates and cocktails.

Recognition and Atmosphere

The commitment to quality extends to the wine list, which earned Fogo de Chão a Wine Spectator Award of Excellence in 2013. This recognition reflects the care taken in pairing robust meats with selections like a big Napa Cabernet or a Chilean favorite. The atmosphere in São Paulo is one of warm, bustling energy — a place where the culinary art of churrasco is alive and shared. The full churrasco experience, with its continuous table-side service, invites guests to create their own plate, mixing favorite meats, sides, and Market Table selections. It is a Brazilian steakhouse that honors its heritage while welcoming everyone to feel the fire.
