The story
In Dundas, Ontario, Barrel Heart Brewing operates out of the historic post office at 104 King Street West. It is a brewery and restaurant that earned a Michelin Bib Gourmand in 2026, a recognition that speaks to the quality and value of what comes out of its kitchen and its barrels.
The brewery's focus is on old-world techniques. Beers are made in the saison style, then set down in oak barrels that once held wine. Over the winter, the beer interacts with the microflora in the wood and the house yeast strain, developing unique character. In spring and summer, the team tastes each barrel to plan blends. After blending, the beer rests on peak-season, locally grown whole fruit, fermenting to complete dryness. The fruit brings a refreshing acidity to the mellow, aged beer. The result is a range of elegant bottles—aged goses, saisons on elderberries or Montmorency cherries, and low-ABV spritzes—that can be cellared like wine.
The food menu is contemporary and ingredient-driven, designed to pair with the beers. Starters include a Carrot Harissa Dip with Ritz crackers, a Fennel Salad with burnt-orange vinaigrette, and Crispy Roasted Potato with malt vinegar salt and black garlic mayo. Larger plates range from a Vadouvan coconut curry with purple cauliflower to a 14-day dry-aged J. Waldron Butchers pork chop with char siu glaze. A Cornish Hen for Two comes with carrot harissa purée and green goddess dressing. Desserts like Banana Pudding with dulce de leche and a Vegemite Basque Cheesecake round out the meal.
Every Friday, Barrel Heart offers a three-course tasting menu for two guests, with optional beer pairings. The regular menu is also available that evening. Reservations are recommended.
The taproom and bottle shop are open Wednesday through Sunday, serving as a place to enjoy a drink, a meal, or to take bottles home. It is a straightforward, well-executed operation that earned its Michelin Bib Gourmand by delivering good quality, good value cooking alongside thoughtful, barrel-aged beer.
