The story
Since 2008, Le St-Urbain has anchored the Fleury Ouest dining scene in Montréal’s Ahuntsic neighbourhood. Founder Marc-André Royal, who also runs the artisan bakery La Bête à pain, built a restaurant that balances refinement with a genuine sense of welcome. The kitchen now operates under chef de cuisine Lindsay McLaren, who crafts a menu that is both researched and comforting—a careful take on modern cuisine.
The menu reads like a tour of Quebec’s larder, with a strong emphasis on sustainable sourcing. Le St-Urbain was the first restaurant in Quebec to earn Ocean Wise certification, a commitment that shows in dishes like Gaspé halibut with asparagus and shishito pepper, or Magdalen Islands lobster salad with wakame vinaigrette. Seafood appears throughout: scallop crudo with wild garlic and verjus, octopus à la plancha with tomatillo and green olives, and North Shore whelks with gochujang and celery.
Meat and vegetable dishes are equally direct. Lamb striploin comes with Quebec radishes and chimichurri; charred leek casarecce pairs with pork cheeks and peas. The celery root ravioli, topped with fresh truffle and fiddleheads, is a seasonal highlight. Desserts keep the same spirit: a warm St-Urbain donut with caramel sauce, or an olive oil cake with Quebec strawberries and meringue.
Le St-Urbain’s ability to combine local ingredients with precise technique earned it a Michelin Recommended distinction in 2026. The dining room is relaxed, with a wine list that spans reds, whites, rosés, and bubbles. Whether you come for a weekday lunch or a Saturday dinner, the cooking is consistent, the flavours rooted in the seasons.
