Since opening in 2024, Panacée has quickly become a destination for those seeking a refined yet welcoming expression of modern cuisine in Montréal. The restaurant, located on rue Atateken in the vibrant Village, earned a Michelin recommendation for its focused, ingredient-driven cooking. Chef Catherine Couvet Desrosiers leads an intimate 30-seat space centered on an 18-seat counter, where guests watch the kitchen at work.
The menu is a five-course tasting format that changes with the seasons, drawing on ingredients from small regional producers. At each service, diners choose between two or three options, allowing for a personalized journey through Québécois flavours. Recent offerings have included a delicate scallop from the Îles-de-la-Madeleine with cucumber and buttermilk, a Nova Scotia lobster with caramelized yogurt and turmeric, and a Kenauk trout with leek and saffron from Beauce. A vegetarian option is always available, and the kitchen accommodates pescatarian preferences.
