A Pillar of Quebec Gastronomy for Over Thirty Years

When Normand Laprise and Christine Lamarche opened Toqué! in 1993 on St. Denis street — ten employees, fifty-five seats — the idea was straightforward and, at the time, quietly radical: build a restaurant around market-fresh, local Quebec products and trace every ingredient back to its source. That commitment to traceability and seasonality, long before those words became industry shorthand, is what shaped the restaurant's identity and has sustained it ever since.

In 2004, Toqué! moved to its current home on Place Jean-Paul Riopelle, in the heart of the Quartier international between Old Montreal and downtown. The new space allowed for a custom kitchen designed around the co-owners' creative and visionary project — and the restaurant quickly became, in their own words, "a laboratory" where young cooks research and develop new approaches guided by a menu that changes daily according to what arrives from the fields.

The Products Above All

The philosophy is stated plainly by Laprise himself: "Surviving trends by focusing on quality and traceability of products first and foremost, this is the Toqué! philosophy." The restaurant works with more than thirty named producers — farmers, herders, foragers, and gardeners — supplying everything from Acadian sturgeon and caviar to Gaspésie tuna, Quebec sea salt, wild herbs and flowers, artisan honey, and heritage-breed meats. To bridge the seasons, the kitchen preserves and purées fruits and vegetables at their peak, ensuring a local and varied pantry year-round.

This avant-garde Canadian cuisine draws from the fields, rivers, ocean, and forest of Quebec and its surrounding regions. The result is a menu that reads as a portrait of the land: stuffed morels with walleye mousseline and smoked sturgeon beurre blanc at lunch; duck magret with white asparagus mille-feuille and morel mushrooms in the evening; a maple sponge cake and panna cotta with pistachio praliné and maple ice cream to close. The six-course tasting menu, available evenings only, is conceived around the wines chosen each week by the head sommelier — the chefs taste first, then build the dishes, an inversion that speaks to how seriously food-and-wine pairing is taken here.

The Wine List and the Bar

Roughly 400 labels and more than 6,000 bottles support a list that spans classic and niche producers, natural wines, private imports, biodynamic selections, and Quebec wines. Wine Spectator has recognized the cellar with its Best of Award of Excellence. At the bar, the same seasonal logic applies: cocktails are made from homemade fruit juices, infusions, and syrups, with an emphasis on Quebec and Canadian microdistilleries.

Recognition Built on Rigour

Toqué! has held the Forbes Travel Guide Four-Star award since 2016 — a distinction that reflects three decades of consistent, uncompromising work. The restaurant is a member of Les Grandes Tables du Monde, has ranked among Canada's 10 best restaurants since that list's inception, and has appeared consecutively among Elite Traveler Magazine's top 100 restaurants in the world. A 2012 cookbook, Toqué!: Creators of a New Quebec Gastronomy, earned a James Beard Foundation Award in 2013 and the Marcel-Couture Prize — the first cookbook to receive the latter. The Icon Award 2025 is the most recent addition to a long record of recognition earned, as the restaurant puts it, through the rigour of its work.

The dress code is casual chic. The ambition is anything but casual.
