At Losange in Rimouski, chef-owner Tommy Roy is doing something quietly ambitious: revisiting the Quebec cuisine of yesteryear. The restaurant’s guiding philosophy is simple—to rediscover the flavours of old Quebec and present them in a warm, convivial atmosphere. It’s a project born from Roy’s creativity, a natural successor to his work at the acclaimed Arlequin.

The kitchen is led by Francois Landry, a cook trained at the Institut Hôtelier de la Capitale in Quebec City, who brings a decade of experience back to the region. Together with a tight-knit team that includes a barman from France and a Senegalese commis, the crew works to deliver plates that feel both rooted and fresh.

A Bib Gourmand Recognition

This approach has earned Losange a Michelin Bib Gourmand in 2026, an award that highlights good quality, good value cooking. In a region where fine dining can feel formal, Losange keeps things approachable without sacrificing ambition. The dining room offers a range of seating—counter dining, outdoor terrace, and a private room with views of the St. Lawrence River—making it suitable for everything from a quiet dinner to a group celebration.

The Team Behind the Stove

Roy’s team is young, energetic, and deeply invested. Chloé Gassion, who started at the Auberge du Mange Grenouille, has been with the project since the beginning. Rosalie Cimon, just nineteen, already brings years of experience and a recent bartending certification from Montreal. Laurie-Alexandra Servant manages reservations and welcomes guests with her trademark positivity. Together, they create the kind of service that feels personal, not scripted.

Losange is open Wednesday through Saturday, and reservations are handled through their online booking platform. For larger groups, the private room accommodates up to 25 guests. The menu changes, so what you’ll eat depends on the season—but the spirit remains the same: a sincere, unfussy celebration of Quebecois cuisine.
