The story
On the shores of Lake Massawippi in the Eastern Townships, Le Hatley is the flagship dining room of Manoir Hovey, a Relais & Châteaux property. The restaurant earned a Michelin Recommended distinction for 2026, a recognition that aligns with its deep commitment to place and craft.
Chef Alexandre Vachon leads the kitchen with a philosophy rooted in memory and landscape. A grandson of farmers, he draws on his childhood and family heritage to create Canadian modern cuisine that is sincere, bold, and connected to nature. As he puts it: “I cook to tell where I come from — the land, the seasons, and the people who shaped me.”
The menu follows the rhythm of the Quebec seasons. Spring arrives with young shoots, wild flowers, and the delicate scents of the forests around the lake. Summer brings abundance from local gardens and orchards, with vibrant plates that capture the sun. Autumn turns to rich harvests and wooded flavours, while winter calls for slow, comforting cooking — broths, hearth fires, and rustic ingredients transformed into profound dishes.
Everything is made in-house, with patience and authenticity. The kitchen’s relationship with local suppliers is central: each plate becomes a dialogue with the terroir, celebrating leaves, roots, flowers, and mushrooms with sensitivity and creativity.
The wine program reflects the same values. The cellar features emerging regions, rare vintages, Canadian wines, and Champagne from sustainable producers — each bottle selected for its balance and its ability to complement Chef Vachon’s cooking.
