Chef Hashimoto’s path to Toronto began over 35 years ago, when he arrived from Japan with his wife Sachiko. Before that, he trained for 15 years in kaiseki cuisine at revered establishments in Iwakuni, Ehime, Tsujitome Kyoto, and Kocho in Tokyo, becoming one of the few kaiseki chefs to bring his craft to the new world. In 2008, he returned to Japan to compete in the prestigious Japanese Culinary Arts Competition, representing Kyoto among eleven national finalists. He finished among the top five chefs and received the Technique Award—a distinction that confirms his skill remains true to authentic kaiseki techniques, even after decades abroad.
At Hashimoto, the chef himself is in the kitchen preparing every dish from start to finish, for every guest—a chef’s table atmosphere every night. His family and staff coordinate the service, ensuring each course arrives with the grace of omotenashi, the Japanese spirit of wholehearted hospitality. The restaurant is open for dinner, with a fixed price of $400 per person, and offers both indoor and outdoor seating.
