The story
Folke is a plant-based restaurant in Vancouver’s Kitsilano neighbourhood, where the cooking is driven by seasonality and a deep connection to British Columbia’s ingredients. The team, led by owner-chef Colin Uyeda and owner-pastry chef Pricilla Deo, crafts every element in-house—from breads and ferments to desserts. The result is a refined yet welcoming approach to vegan fine dining, rooted in simplicity and technique.
The menu is designed for sharing: a selection of small plates that evolve with the seasons, highlighting produce from local farms, forests, and the coastline. Guests can also choose the chef’s tasting menu, a multi-course journey that finishes with dessert. Every dish is composed thoughtfully, letting natural flavours take centre stage. Sustainability is central to the kitchen, with a low-waste philosophy and close relationships with BC producers.
Folke operates as a no-tipping restaurant, a commitment to fairness and transparency for both the team and guests. This allows the service to feel seamless and intentional, focused on genuine hospitality rather than transaction.
In 2023, Folke was named one of Canada’s Best New Restaurants. The following year, the Michelin Guide added it to its selection, recognising the restaurant’s refined plant-based cuisine and its contribution to Vancouver’s dining landscape.
