The story
PiDGiN has called Vancouver’s historic Gastown home since 2013. The kitchen operates at the intersection of French technique, Southeast Asian brightness, Japanese precision, and Pacific Northwest bounty. This inventive approach has earned the restaurant a Michelin recommendation, a fitting recognition for a kitchen that treats Vancouver’s multicultural fabric as its primary ingredient.
The name PiDGiN refers to a language born when cultures meet—irreverent, inventive, alive. That spirit drives every plate. The menu changes with the seasons, but the philosophy remains constant: honest cooking that reflects a city built by people from everywhere.
Owner and operator Brandon Grossutti has steered PiDGiN since its founding. Chef de Cuisine Shin Nagamori, a veteran of Vancouver’s restaurant scene who hails from Japan, brings his heritage to bear on dishes that meld French precision with Northwest ingredients. Wine Director Jordan Pollard, with over a decade at the restaurant, curates a program that matches the kitchen’s distinct flavours. Bar Manager Jessica Toews keeps PiDGiN among the city’s top destinations for cocktails.
The current Spring ’26 tasting menu ($109 per person) is a curated journey through the kitchen’s finest offerings. It begins with a nori pâte à choux filled with yuzu kosho duxelle and onion jam, followed by a scallop with curry sofrito. A5 wagyu and duxelle nori cappelletti appear with morels and sanshozuke butter sauce; olive oil–poached halibut arrives in a kombu umeboshi broth with somen noodles. Duck breast comes with orange jus and miso lentil. The meal closes with miso ice cream mochi and amazake citrus rice. A wine, cocktail, and sake pairing is available for $79.
PiDGiN describes itself as a neighbourhood restaurant with serious ambitions and an open door. The kitchen has become a proving ground; alumni now lead kitchens across Vancouver and beyond. Yet the welcome remains unpretentious. In a city of remarkable dining, PiDGiN stands out for its clarity of purpose: Vancouver on a plate.
